Funky Pad Thai with Shrimp
Gastro-history is an interesting thing if you want to know why you are eating what you are eating. For example there is Pad Thai which originates in China and Vietnam but today known as Thailand’s most recognized dish.
In the 30’s and 40’s of the last century the nationalist government of Thailand wanted to create a recognizable Thai dish and also wanted to replace rice as staple for rice noodles, so that they could export more rice. So they took this well-known stir-fried rice noodle dish, made a few alterations to suit the Thai tastes and started a big campaign to make it popular. It was very successful as now you can eat Pad Thai in every Thai restaurant outside Thailand too. We serve the shrimp version this week on.
