Sweet and sour green papaya salad with ginger chicken

Papaya itself comes from Mexico, but now it is common fruit on the tropics. This dish was born in Laos, though now it is eaten every day in Thailand and Vietnam too. There is no better way to beat the heat then this food. It is sweet a bit and sour from the lime, a bit salty and a bit bitter, very filling but light and has at least six different textures. We add a big portion of ginger chicken to balance the vegetable-protein poise.
