This is what Vietnamese cuisine is all about: freshness, complexity of flavors and delicacy. Have I mentioned that it’s pretty healthy, too? Just the perfect combination of veggies, fresh herbs, rice noodles and the topping of your choice grilled to order: beef sirloin marinated with thai lemongrass, chicken thighs in ginger sauce or tofu. Roasted crushed peanuts and some roasted onions go on top with a citrusy garlic-fish sauce dressing. Except for the tofu one, that is crowned with our genial garlic-sesame seed oil-soy sauce dressing from Korea. It’s not an overstatement that many of our guests have been converted into tofu eaters who could have never imagined putting soy curd on their chopsticks.
